NARGISI KOFTA:
INGREDIENTS:
500 gms mutton mince
4 hard- boiled eggs
1 egg, whisked
4 cardamoms
6 cloves
1 cinnamon stick
1 onion, chopped
2 green chillies
Salt, to taste
Ghee for frying
50 gms cornflour
For the curry:
500 gms tomato
1/2 tsp each, turmeric and garam masala powders
1 tsp chilli powder
1 green chilli
100 gms onion
3 cloves garlic
10 gms ghee
METHOD:

For the curry:
500 gms tomato
1/2 tsp each, turmeric and garam masala powders
1 tsp chilli powder
1 green chilli
100 gms onion
3 cloves garlic
10 gms ghee
METHOD:
- Powder together cardmom, clove andcinnamon and keep aside.
- To make the koftas, mix whisked egg with mince, chopped green chillies, onion, powdered spices and salt.
- Dust boiled eggs with cornflour and coat it with mince mixture, using a firm hand. Deep-fry the koftas until the meat around the koftas becomes solid.
- Halve each kofta lengthwise and keep aside. To make the curry, heat ghee in a saucepan and saute chopped onion, garlic, green chilli, and turmeric and chili powder until light brown.
- Puree tomato, add along with salt. Let it simmer till oil begins to seprate. Add garam masala powder and gently place the koftas with the yolk side facing up.
- Simmer lightly without disturbing the kofta. Garnish with coriander and serve hot.
